Feature: switch from poetry to uv

Description

• get some feedback from Pruna people, if they're happy let's proceed with this PR.
• remove poetry as a dependency
• use uv everywhere including github files
• update documentation to encourage using uv rather than pip install
• update the contributing documentation as well

hatch build took ages on my machine; while with uv it was instantaneous and it seems something is off 🤷

Hello, thanks a lot for the great work. I see that this might a duplicate PR of #164 that I was working on yesterday 😅. We would love if you could give your feedback on that one. #164 aims to basically just make the switch and we would love it if you want to help us with the next steps of updating the Github workflows and the documentation! Closing this for now for duplication reasons.
