Is it at all possible to use a USB controller with this vs the GPIO pins?

And it's not possible, the OS that was built for this was entirely crafted to be minimal startup. To add USB support would remove the ability to be so small and boot quickly. For now it's impossible so use the pins for inputs described in the Cardboard project
