sauron: use as fallback

It would be super cool if sauron could be configured to either use the Esplora backend or bitcoind as primary/fallback - thus it can give higher robustness by adding redundancy.

Mh, I'm not able to catch the motivation on why this issue is not addressed in the PR. The java plugin does exactly what the issue describes, the only difference with sauron Is that is written in Java with an OOP paradigm and with a little bit more attention to be failure resistant.

Well, i think that it's great to have different backends to pick from but this issue was specifically related to Sauron whereas #248 adds a link to an alternative backend hence these are different issues
