DXVK-Sarek is the part needed for users on old GPUs. In Bottles, we do not bundle DXVK in Proton, those are installed separately, so users can install DXVK-Sarek in the prefix and use it with any runner. The runtime in Proton-Sarek wouldn't function in Bottles, I think, so there's hardly any reason to use that as runner over any other version of Wine or Proton.
