Read The Docs does not recognize miniforge-latest

I think RTD has not updated its backend yet to allow for miniforge (see readthedocs/readthedocs.org#11690). I am temporary resetting it to mamba-forge until they fix it on their end. Note I accidentally pushed from main and need to override to revert is. Given the singular line I will keep the security in check, and avoid this mistake in the future.

I will keep this issue open as a reminder.
